Polygonaceae - 10% Polysaccharides

Polygonaceous chervil (Polyporus umbellatus), also known as oyster mushroom, is a species of fungus belonging to the chervil family (Polyporaceae). Sailfish is widely valued in Asian cuisine for its flavorful qualities, as well as in Traditional Chinese Medicine for its potential health properties.

Modern science has also taken an interest in the effects of this amazing mushroom - especially the polysaccharides it contains. Studies indicate that the polysaccharides present in the multiflora sailfish, such as beta-glucan and chitin, may have positive effects on:

High-quality extract of polygynous sailfish

The polysaccharides contained in polygonwort are an important component of this fungus and have potentially beneficial effects on the human body. Here are some of the important polysaccharides found in polygonwort and their effects on health:

  1. Beta-glucan: This is one of the most important groups of polysaccharides present in the multiflora sailfish. Beta-glucan is known for its immunomodulatory properties, meaning that it can affect the immune system.

  2. Studies suggest that beta-glucan can stimulate the production of important immune cells (such as cytokines), supporting the body in fighting off infections.11

  3. Chitin: This is another polysaccharide found in the multilobed sailfish, mainly in the fungus' cell walls. Chitin has anti-inflammatory properties by inhibiting certain enzymes and inflammatorymediators12,13,14,15,16.

Is the multilobed sailfish edible?

The health benefits of multi-headed chervil are not the only reasons to pay attention to this mushroom. It is also an excellent culinary ingredient, and its edibility attracts both mushroom hunters and lovers of fine dining.

Sailfish is valued for its delicate, nutty flavor and meaty texture. This makes it a valued ingredient in many dishes, giving them a unique flavor and aroma. Mediterranean and Asian cuisines especially appreciate this mushroom, using it in a variety of dishes such as risotto, salads, soups and sauces.

It is worth noting that the multiflora chervil not only enriches the taste of dishes. It can also be a great alternative to meat for those who prefer a plant-based diet or are looking for a variety of protein sources. Thanks to its texture and flavor, polygonized chiles are often used in vegetarian and vegan dishes, such as burgers and stir-fry.

Keep in mind, however, that while polygonwort is edible and valued in cooking, you should always make sure the mushrooms come from a reliable source and are properly prepared before consumption. Improper preparation or consumption of inedible mushrooms can lead to unpleasant stomach discomfort and can even be harmful to your health.

Does the multilobed chervil occur in Poland?

Although the multilobed chervil is a mushroom that is more popular in other regions of the world, it is also found in Poland. It is a relatively rare species, but can be found in various parts of the country. When looking for it, it is important to remember that it is a fungus under partial protection in Poland (since 2014) and its collection is allowed with the appropriate permit. The season for chervil usually lasts from summer to autumn, with the peak of its occurrence determined in August and September.

How to identify the polygonal chervil in the wild?

If you want to go mushrooming in search of chervil, it is worthwhile to familiarize yourself with its characteristics. This is important, because it is not a popular species among Polish mushroom pickers and it is easy to confuse it with similar mushrooms that can harm our health.

  • Fruitbodies: The magnificent fruiting body of the chervil grows from an irregularly branched sclerotium, located shallowly underground or attached to tree roots.
  • The branches end in numerous caps, the number of which can reach about 100.
  • Cap appearance: The hat of the multi-headed sailfish is usually between 5 and 15 centimeters in diameter. It is rounded and has a characteristic texture of smooth, velvety and slightly scaly skin. The color of the hat can vary - usually taking on a shade of brown, light brown, gray or purple.
  • During the growth of the fruiting body, we can also meet a lighter ring around the edge of the hat.
  • Blades: The blades of the multilobed sailfish are dense, usually whitish or cream-colored. Occasionally, they can also have a slight pink tint.
  • They are fibrously adhered to the stem and tend to darken with age. Flesh
  • : The flesh of the multilobed sailfish is white, thick and fleshy. It has a delicate, nutty smell, which is one of the distinctive hallmarks of this mushroom.
  • The taste is mild and pleasant.
  • Occurrence: the chervil usually grows from summer to autumn on the roots of living deciduous trees (usually oak, beech, maple and hornbeam) or near the trunk, growing out of the ground. Sailfish fruit in the same place for many years, so we can confidently return for more the next season.

It is worth remembering that there are several similar species of mushrooms with a similar appearance to the multi-headed chervil. Therefore, it is always advisable to consult a mycologist or a more experienced fungist. Wanting to be sure that you are consuming polygonwort, it is worth turning to a reliable supplier of the fungus or reaching for a natural dietary supplement containing polygonwort extract in capsules.
